Everday::Truffles

I promised Callum we’d make truffles for Valentine’s Day (don’t I look like Super Mom?  I had leftover ingredients from Christmas to use up, and seriously, truffles are so flippin’ easy).  There’s no way to say this without sounding all high and mighty, but if you’re looking for a good baking activity to do with your toddlers, truffles are it. 

They’re so easy to mix up, it’s a tactile experience, they get to make something, and it’s a beautiful toddler mess.   I do reccommend doing this with another adult around because it IS a mess, and when the kids hit that sugar high it’s nice to have some backup around.  And nice to get their hands wash before they start pulling the clean cloth diapers out of the diaper trolley…  not that that happened, of course.  Because my life? PERFECT.

 The recipe:

  • 2 cups semisweet chocolate chips
  • 2 cups milk chocolate chips
  • 2/3 cup whipping cream
  • 1 tsp vanilla

Combine both chocolate chips, whipping cream and vanilla in a large, heavy saucepan.  Heat and stir on medium-low until smooth.   Remove from heat.  Cool to room temperature.  Chill until firm.  Shape into balls, using a tsp each.  Roll each ball in coating of your choice (icing sugar, cocoa, coconut, ground nuts, ground candy canes, ground cinanamon hearts)

We ground the cinanamon hearts, and then rolled the truffles in those to make them valentiney.  We also used butterscotch chips instead of milk chocolate (which is what I had lying around).  Bit of weird taste combination, but it worked.  You can also use eggnog instead of cream, and white chocolate chips instead of milk…  it’s a pretty versatile recipe.
